Southern tea cakes are buttery, soft, a little bit sweet, fluffy and chewy. They look like a simple butter cookie but, they have more of a cake consistency. To me they kind of taste like sweet cornbread in a cookie/cake form. They aren't suppose to be super flavorful - but that doesn't mean they're not super delicious. These go perfectly with lemonade, sweet tea, or hot tea. I love making these in the springtime!
What You Need
1 cup of butter
1 1/2 cup of sugar
2 eggs
3 cups of flour
1/2 teaspoon baking soda
1/2 salt
1/2 cinnamon or nutmeg
1 teaspoon of vanilla
Directions
1- Preheat oven to 325
2- Cream together the butter and sugar, then beat in eggs one at a time and add in vanilla.
3- In a separate bowl combine flour, baking soda, salt and your choice of spice.
4- Combine dry ingredients to the wet ingredients.
5- Once combined, cover and put in fridge until dough hardens (10 - 15 minutes)
6- On a floured surface roll out dough and cut into any shape. Add to a baking sheet and put in oven for 8-11 minutes.
