Southern Peach Crumble Bars






Ingredients


Crust/ topping

1 cup of flour

1 cup and 1/3 of oats

3/4 cup of sugar

1 teaspoon of cinnamon

2/3 cup of melted butter


Peach Filling

2 cups of peaches

2 tablespoons of sugar

2 teaspoons of cornstarch

1 teaspoon lemon juice

1 teaspoon of almond extract (or vanilla)



Directions


1) Preheat oven to 350 and line a 8 inch pan with parchment paper


2) Chop peaches into pieces, then mix lemon juice, almond extract, cornstarch and sugar with the peaches.


3) In a different bowl mix flour, oats, sugar and cinnamon together. Then add the melted butter and combine.


4) Place mixture in the bottom of the pan (save some for the top). Next add peaches then the remaining of the crumble. Bake for 30-35 minutes. Enjoy!
