Rainy Day Oatmeal Cookies



If I wasn't a dancer turned fitness instructor, I would of loved to go into baking. My mom once wanted to open up a coffee shop with baked goods and we spent so much time baking when I was growing up, that baking has become therapy for me. It's been a rainy day here in South Carolina and what goes best with a dark, rainy day? Thick, chewy oatmeal cookies, with a slight twist.




Get Your Ingredients together



2 sticks of salted butter (there's no such thing as too much butter in the south)

3/4 cup of packed brown sugar

1/2 cup of granulated sugar

2 eggs

1 teaspoon of vanilla

1 teaspoon of almond extract

2 1/2 cups of of fashion rolled oats

1 3/4 cups of all purpose flour

1/2 teaspoon of baking soda

1/2 teaspoon baking powder

1/2 teaspoon of sea salt

Dash of cinnamon






Directions

1 Preheat oven to 325 and line your baking sheet with parchment paper


2 Stir together your butter and sugars until blended. Then add eggs, vanilla and almond extract.


3 Throw the rest of the dry ingredients in (option to add raisins or chocolate chips) then scoop dough onto the baking sheet for 10-12 minutes depending on your oven.
