Mud Hen Bars





A vintage southern treat that you may find in many church cookbooks. Mud Hen Bars are a sweet, southern pecan bar filled with marshmallow and chocolate chips, topped with a brown sugar meringue.


Why are they called Mud Hen Bars? Well they aren't the prettiest bars out there due to their cracked tops. Ugly as a Mud Hen was a big expression back then and I guess it just stuck with these bars. One of my favorite things about these vintage southern recipes are the names!



Ingredients


1/2 cup of butter

1 cup of sugar

1 teaspoon of vanilla

3/4 cup of chopped pecans

1 whole egg and two eggs separated

1 1/2 cup of flour

1 teaspoon of baking powder

1/2 teaspoon of salt

1 cup of mini marshmallows

1 cup of semi sweet chocolate chips

1 cup of brown sugar



Directions


1) Preheat oven to 350 and grease a 9x13 with butter


2) In a large bowl mix the butter, sugar, egg plus two yoks and vanilla.


3) Add in flour, baking powder and salt until combined then add to the baking dish.


4) Top with marshmallows and chocolate chips


5) In a different bowl with the whisk attachment beat the two remaining egg whites until stiff peaks form, then fold in brown sugar.


6) Spread of top of marshmallows and chocolate chips and bake for 30 minutes.
