Easy Southern Possum Pie




First you want to find a possum.... I'm kidding y'all! No possums here in this pie! Story goes its called possum pie because it's pretending to be something its not - "playing possum." By hiding a delicious layer of chocolate under lots of whipped cream. You will find this pie in a lot of restaurants, roadside diners, and church cookbooks!

Let's get to it!


What ya need:

8 oz of cream cheese

3/4 cup of confectioners sugar

1 gram cracker crust

1/2 cup of chopped pecans

1-1/3 cup of milk

1 teaspoon of vanilla

1/4 cup of vanilla pudding mix

1/3 cup of chocolate pudding mix

1/2 cup of heavy whipping cream




Directions

1 In a bowl combine cream cheese and sugar until smooth. Then spoon into crust and sprinkle chopped pecans


2 In another bowl whisk the milk, both pudding mixes, then let sit for 2 minutes. Spoon over pecans and refrigerate for 4 hours.


3 Use the heavy whipping cream in a cold bowl to whip up the whipped topping for the pie. Add and top and serve - option to add more pecans on top or chocolate shavings.
